Cottage cheese [paneer] is comman in South Asian cuisines . Cottage cheese made by curdling heated milk, lemon juice, yogurt and other food acids. To prepare cottage cheese lemon juice, vinegar or yogurt is added to hot milk to separate the curds from the whey. Drained the curds in muslin cloth and the excess water is pressed out and place under a heavy weight for 2-3 hours and cut into cubes and use in cuisines.
The preparation of cottage cheese diverges, based on its use and regional variation. The use of cottage cheese is more common in northern India, Pakistan and Bengladesh.
