How to Make New Year Rice


Ingredients for New Year Rice

Long grain rice – 2 cups
Mutton – 500 gms [cut into pieces]
Cinnamon –4
Cloves –5
Cardamom – 3
Ani seeds – ½ tsp
Ginger – 1 piece [chopped]
Onion paste – 1 tbsp
Onions – 2 [sliced]
Mint leaves a few
Garlic flakes – 10
Curd – ½ cup
Oil – ½ cup
Salt to taste
Ingredients for the Rice
Cashew nuts – 1 tbsp
Raisins – 10
Tomatoes – 2 [sliced]
Cloves – 8
Cardamom – 6
Cinnamon – 2
Coriander leaves – 1 tbsp [chopped]
Mint leaves – 1 tsp [chopped]
Ghee – 2 tsp
Milk – ¼ cup
Saffron dissolved in milk – a pinch

Method of Preparing New Year Rice

Powder the cloves, cinnamon and cardamom. Heat oil in a pan and fry the sliced onions and keep aside. In the same pan fry onion paste, chopped green chilies, chopped ginger and chopped garlic well.
Add the powdered ingredients to the mutton pieces and salt to taste.
Add boiling water and cook the meat. When the meat is half cooked add the curd and salt. Again cook the meat. When done strain one cup of gravy and keep aside.

Method of Preparing Rice

Boil water with cloves, cinnamon, cardamom and salt. Add washed and drained rice. Cover and cook the rice for 15—20 minutes.
 Fry the nuts in ghee. Heat oil in a pan and fry the sliced onions and remove. Add the sliced tomatoes and remove. Grease a thick bottomed pan spread half of the cooked rice. Then spread the mutton korma. Put another layer of rice.
Cover the rice with wet cloth, cover the pan and bake in oven and set in 350°F for 30n minutes.
Garnish with fried onions, raisins and cashew nuts.
Serve hot with salad.
