FRENCH DRESSING RECIPE

INGREDIENTS  FOR FRENCH DRESSING

Pine apple Juice – 1/2 cup

Lemon Juice – 1 tbsp

Salad Oil – 1 tbsp

Salt to Taste

Paprika – 1/2 tsp

Sugar – 1 tsp

METHOD OF PREPARING FRENCH DRESSING

Mix together all ingredients and shake well. Chill. Beat gently before serving.

This dressing can be used with fruit salads

WHITE SAUCE RECIPE

INGREDIENTS FOR WHITE SAUCE

Flour – 1 tbsp

Butter – 1 tbsp

Milk – 1 cup

METHOD OF PREPARING WHITE SAUCE

Melt butter in sauce pan on low flame and blend in flour. Stir in milk and cook on low flame until thick. Mix gently and transfer into glass jars and refrigerate to store.

CARROT SOUP RECIPE

INGREDIENTS FOR CARROT SOUP

Carrot – 1 kg

Celery – 1 stalk

Water – 2 cups

White Sauce – 1 cup

Salt and pepper to taste

METHOD OF PREPARING CARROT SOUP

Boil water and cook carrots and celery. Mash and strain vegetables. Add white sauce to the soup and cook for 10 minutes on low flame.

Add salt and pepper. Serve hot

APPLE CRISP RECIPE

INGREDIENTS FOR APPLE CRISP

Apple – 3 cups [sliced]

Honey – 2 tbsp

Salt – ¼ tsp

Melted butter – 1 tbsp

Butter –3 Tsp

Raisin bran – 1 cup

Sugar – ¼ cup

Flour –2 tsp

Cinnamon – ½ tsp

METHOD OF PREPARING APPLE CRISP

Mix together sliced apple sugar, melted butter, salt and cinnamon.

Pour into a greased baking dish. Set aside. Cream butter; add sugar and flour and mix well.

Add raisin bran and crumble together and spread over the apple mixture in baking dish. Cover and bake in moderate oven 350°F for 30 minutes.

Remove the cover and bake for 15 minutes again. Serve warm with cream.

EASY CAKE RECIPE

INGREDIENTS FOR EASY CAKE RECIPE

Flour – 250 gms

Milk – ¼ cup

Butter – 250 gms

Sugar – 250 gms [powdered]

Baking powder – 1 rasp

Egg yolk – 4

Egg white – 4

Orange peel ground – 1 tsp

Lime rind – 1 pinch

Vanilla essence – 1 tsp

Sugar – 1 tsp

METHOD OF PREPARING AN EASY CAKE

Sieve flour and baking powder. Cream the butter and the powdered sugar. Beat well and add the egg yolk one by one and beat gently.

Add the ground orange peel and lime rind. Mix well. Fold in the flour and add milk alternatively.

Beat the egg white by adding the vanilla essence and sugar. Mix all the ingredients well and prepared a batter.

Line a cake tin with greased paper and pour the cake batter into it. Bake in an ovenof400° F for 35 minutes.

FISH KEFARI RECIPE

INGREDIENTS FOR FISH KEFARI

Fish – 259 gms

Rice – 150 gms

Egg – 1 [boiled and shelled]

Cloves – 4

Garam masala – ½ tsp

Pepper powder – ½ tsp

Onion – 1 [chopped]

Red chilli powder – ½ tsp

Oil – 3 tbsp

Onion –1 [sliced]

Cardamoms – 2 [crushed]

Coriander leaves – 2 tbsp [chopped]

Salt to taste

METHOD OF PREPARING FISH KEFARI

Clean the fish and cut into small pieces and boil. Wash the rice and boil and drain.

Heat the oil and fry the onion slices until golden brown and remove.

Fry the cloves, crushed cardamom seeds and chopped onion and fry for 5 minutes. Add garam masala, salt, pepper powder and boiled fish pieces and mix well.

Boil the egg and chop into slices and spread over fish and rice in circular form. Finally garnish with chopped coriander leaves and serve hot.

BUTTER NUT BALLS RECIPE

INGREDIENTS FOR BUTTER NUT BALLS

Butter – 200 gms

Flour – 2 ½ cups

Icing sugar – ¾ cup

Vanilla – 2 tsp

Salt – 1 pinch

METHOD OF PREPARING BUTTER NUT BALLS

Blend the butter and sugar in rest of ingredients. Chill dough. Shape into balls and decorate with nut or cherry.

Place on ungreased baking tin and bake 425°F for 10 minutes.

BANANA PIE RECIPE

INGREDIENTS FOR BANANA PIE

Plain biscuits – 12 pieces

Brown sugar – 1 tbsp

Ripe bananas – 4

Icing sugar – 1 tbsp

Thick cream – 1 cup

Coconut – ¼ cup

Orange rind – 1 tsp

METHOD OF PREPARING BANAN PIE

Melt the butter. Crush the biscuits and mix with icing sugar and enough melted butter to make a firm mixture. Pack into a well buttered glass pie dish and place in refrigerator for 15 minutes.

Beat the brown sugar with the cream and mix gently with peeled and sliced bananas and the orange rind.

Add the banana mixture into the biscuit mixture and sprinkle with desiccated coconut and serve

CHILLI CHEESE WITH CROUTONS RECIPE

INGREDIENTS FOR CHILLI CHEESE CROUTONS

Butter – 2 tbsp

Baked beans – 1 can

Chilli powder – ½ cup

Green peppers – 2

Cheese – 1 cup

Salt to taste

METHOD OF PREPARING CHILLI CHEESE WITH CROUTONS

Melt butter in a pan and add diced peppers, cheese and cover the pan and cook on low flame for 5 minutes. Add beans, chilli powder and salt.

Mix well and serve.

TOMATO CURRY RECIPE

INGREDIENTS FOR TOMATO CURRY

Tomatoes – 4 [chopped]

Onion – 1 [chopped]

Green chilies – 3 [chopped]

Ginger – 1 piece [chopped]

Black gram dal – 1 tsp

Mustard seeds – 1 tsp

Curry leaves – 1 strand

Red chilies – 2

Tamarind pulp – 1 tsp

Oil – 1 tbsp

Turmeric powder – ¼ tsp

Red chili powder – 1 tsp

Salt to taste

METHOD OF PREPARING TOMATO CURRY

Heat oil in a pan and fry mustard seeds, black gram, red chilies, chopped green chilies, chopped ginger, chopped onion and fry for 5 minutes.

Add turmeric powder, red chilli powder, curry leaves and salt and fry for 2 minutes.

Add chopped tomatoes and mix well. Mix the tamarind pulp in little water and add to the tomato mixture Add enough water and cook on low flame until gravy become thick.

Serve hot with rice

FRUIT CURRY RECIPE

INGREDIENTS FOR REUIT CURRY

Apples – 3 [sliced]

Bananas – 5

Onions – 2[chopped]

Curry powder – 1 tsp

Ginger – 1 piece

Lemon – juice – 1 tbsp

Tomatoes — 4

Brown sugar – 1 tbsp

Cinnamon – 1 stick

Cloves – 2

Yogurt – ½ cup

Boiling water – ½ cup

Oil – 2 tbsp

METHOD OF PREPARING FRUIT CURRY

Heat oil in a pan ad fry the sliced onions for 2 minutes, add sliced apples and fry for 5 minutes. Add chopped ginger and curry powder and mix well.

Add whole bananas and fry for 3 minutes. Add rest of the ingredients. Cover the pan with a lid and cook on low flame for 20 -25 minutes. Serve with rice

DHAL [LENTILS] HALWA RECIPE

INGREDEINTS FOR DHAL [LENTILS] HALWA

Green lentils [moong dhal]  – 1 cup

Raisins – 2 tbsp

Cardamoms – 4 [crushed]

Almonds – 2 tbsp [crushed]

Ghee – ½ cup

Sugar – 1 cup

Milk – 1 cup

Saffron – ¼ tsp

METHOD OF PREPARING DHAL [LENTILS] HALWA

Soak the lentil over night, and then grind them finely to a paste. Crush the saffron and soak in one tbsp of water. Heat ghee in a pan and fry the lentil paste until light brown. Stirring continuously.

Add raisins, crushed cardamoms, saffron and milk. And cook on low heat. Add sugar and stirring gently. And cook until halwa leaves from the pan.

Remove from the flame and transfer into a serving dish.

Garnish with crushed almonds and serve

MUTTON RIB CHOPS RECIPE

INGREDIENTS FOR MUTTON RIB CHOPS

Mutton with ribs – ½ kg

Onion – 1 [chopped]

Tomato – 1 [chopped]

Salt and vinegar to taste

Garlic flakes – 4

Ginger – 1 piece

Chilli powder – 2 TSP

Turmeric powder – ¼ tsp

Pepper powder – ½ tsp

Oil – 2 tbsp

Cumin seeds – ½ tsp [roast and powdered]

Cardamom – 2 [powdered]

Cloves – 4 [powdered]

Cinnamon – 2 [powdered]

Curry leaves – 1 strand

METHOD OF PREPARING MUTTON RIB CHOPS

Cook the mutton chops with salt and water. Add vinegar and cook again until tender and the gravy is about 1 cup.

Heat oil in a pan and fry for 5 minutes. Add tomatoes and fry for another 5 minutes.

Add ginger paste, garlic paste, pepper powder, turmeric powder, chilli powder and fry for 2 minutes. Add the cooked mutton.

Pour the gravy and cook on low flame. Add the powdered spices. Cook again till the gravy become thick.

Garnish with curry leaves and serve hot.

SOYABEAN CROQUETTES RECIPE

INGREDIENTS OF SOYA BEAN CROQUETTES

Soya bean – 2 cups [cooked]

Tomato puree – ¾ cup

Salt – 1 tsp

Onion – 1 [minced]

Flour – 3 tbsp

Bread crumbs

Celery

Butter – 2 tbsp

METHOD OF PREPARING SOYABEAN CROQUETTES

Boil the minced onion and seasoning in tomato puree. Make a roux of the flour and butter, add to the tomato puree and cook to thick gravy. Add soya bean pulp and shape into croquettes.

Roll in dry bread crumbs and fry in oil or bake in oven.

QUAKER PUDDING RECIPE

INGREDIENTS FOR QUAKER PUDDING

Bread crumbs – 3 cups

Raisins – ½ cup [chopped]

Melted butter – ½ cup

Syrup or treacle -- ½ cup

Cloves – ½ tsp

Nutmeg – ¼ tsp

Flour – 1 cup [sifted]

Milk – 1 cup

Salt – ½ tsp

Bi-carb – ¼ tsp

Cinnamon – 2 tsp

METHOD OF PREPARING QUAKER PUDDING

Mix crumbs and milk well and add melted butter and syrup. Add raisins and flour. Pour the mixture into a greased 1 quart mould and steam for 2 hours.

Serve with creamy sauce

PEPPERS WITH POTATOES RECIPE

INGREDIENTS FOR PEPPERS WITH POTATOES

Sweet pepper – 3[cut into thin strips length]

Potatoes – 5[cut into cubes]

Oil – 2 tbsp

Garlic flakes – 2 [chopped]

Tomato juice – 1 cup

Onion – 1 [sliced]

Salt and pepper to taste

Coriander leaves – 1 tbsp [chopped]

MRTHOD OF PREPARING PEPPERS WITH POTATOES

Heat oil in a pan and fry the sliced onion and garlic flakes for 2 minutes, Add sweet peppers and sauté for 3 minutes. Add potatoes, tomato juice, salt and pepper and mix well.

Cover and cook on low flame for 20 – 25 minutes, or until potatoes are tender. Remove from the flame and transfer into a serving dish and garnish with chopped coriander leaves.

SEMOLINA [RAWA, SOOJI] -- WHEAT DOSA RECIPE

INGREDIENTS FOR SEMOLINA – WHEAT DOSA

Wheat flour – 1 cup

Semolina – ½ cup

Salt and water -- as required

Onion – 1 [chopped]

Green chilies – 2[chopped]

Ginger – 1 small piece [chopped]

Curry leaves – 1 strand [chopped]

Salt to taste

Oil – 1 tbsp

METHOD OF PREPARING SEMOLINA – WHEAT DOSA

Mix wheat flour, semolina, salt and water and make into a thin batter.

Add chopped onion, chopped ginger, chopped green chilies, chopped curry leaves and mix gently.

Apply gingelly oil on a hot griddle and spread 2 tbsp of the dosa batter on the griddle. When one side of the dosa is done, add small quantities of oil or ghee around the dosa. This makes it very easy to lift it from the griddle and makes it brown and crisp.

Serve hot with coconut chutney or onion chutney.

LETTUCE CHEESE ROLL RECIPE

INGREDIENTS FOR THE LETTUCE DHEESE ROLL

Nuts – ½ cup [chopped]

Raisins – ½ cup

Cottage cheese – 1 ½ cups

Salt to taste

Eggless mayonnaise to moisture

METHOD OF PREPARAING OF LETTUCE CHEESE ROLL

Mix all the ingredients and spread on 8 large lettuce leaves and roll each leaf like a jelly roll

Bind with strips of pimento. Chill before serving.

CABBAGRE WITH TOMATOES RECIPE

INGREDIENTS FOR CABBAGE WITH TOMATOES

Cabbage medium – 1 [shredded]

Onion – 1 [sliced]

Vinegar – 1 tbsp

Sugar – 1 tbsp

Caraway seeds – ½ tsp

Water – ½ cup

Tomatoes – 3 [chopped]

FIour – 1 tbsp

Salt to taste

Oil for frying

METHOD OF PREPARINGCABBAGE WITH TOMATO

Heat oil in a pan and put caraway seeds, when the seeds sputter add onions and fry until golden brown.

Add cabbage, vinegar, sugar, salt and water and cook for 15 minutes on low flame. Mix the flour with 2-3 tsp of pan liquid, make a smooth paste and add into the cabbage and cook uncovered stirring constantly until mixture thickens.
