Ingredients for Easy Sandwich

Cabbage – 5 tbsp [finely chopped]
Capsicum – 2 tbsp [finely chopped]
Carrot – 1 tbsp [finely chopped]
Cream – 1tbsp
Chili Powder – ¼ tsp
Salt to taste
Carom seeds – ½ tsp [ajwain]
Bread slices – 4

Method of Preparing Easy Sandwich

 Mix all ingredients except bread slices.
Slightly roast the bread slices and spread the vegetable mixture on them.
Serve with tomato sauce.

Orange Marmalade Recipe


Ingredients for Orange Marmalade

Oranges – 6
Lemons – 5
Water – 5 cups
Sugar –3 cups

Method of Preparing Orange Marmalade

Squeeze juice from lemons and oranges. Grate rind of 3 lemons. Grind peels and pulp of oranges. Mix the fruit juice and grated and ground mixture and water.
Bring fruit mixture to boil in a large pan and simmer until the mixture is tender and reduced to half the original volume. Add sugar and bring to boil on low flame. Once it foams, remove from heat.
Skim off foam.  Cool. Seal in airtight glass jars. 

How to Make Strawberry Jam


Ingredients for Strawberry Jam

Strawberries – 3 cups [hulled]
Sugar – 2½ cup
Lemon juice -- 1/4 cup

Method of the preparation of Strawberry jam

Put the strawberries in a bowl and crushed them. Ina thick bottomed sauce pan add mashed strawberries, sugar, lemon juice and cook on low flame until the sugar is dissolved. Increase the heat to high and bring the mixture to a full rolling  boil until the mixture reaches  220 F.  Stirring constantly.
 The jam  becomes thick. Remove from the heat, cool and stir occasionally.
Transfer into hot sterile jars, leaving 1/4 inch head space and seal.

Ingredients for Yellow Rice

Rice – 1 ½ cups
Butter – 1 tbsp
Turmeric—1 tsp
Raisin – ½ cup
Sugar – ½ cup
Salt

Method of Preparing Yellow Rice

Wash rice well and put into sufficient salted rapidly boiling water to cover.
Boil for 5 minutes, then drain off water and cover again with fresh boiling water. As most of the water becomes reduced by boiling, add all remaining ingredients.
Stir briefly, then cook until the rice is ready.

Raw carrots – 2 cup [shredded]
Green pepper - 1 [ cut into thin slices]
Cucumber -- 1 [peeled and sliced]
Water -- 1/4 cup
Raw Cabbage – 1 cup[shredded]
Sugar -- 1/2 cup
White vinegar or apple cider vinegar -- 2 tbsp
Onions – 2 [sliced paper thin]
Oregano -- 1 tsp
Canola or vegetable oil -- 1 cup
Salt to taste

Method of Preparing Health Salad

Finely chop the above and mix all vegetables. Mix other ingredients and pour over the veggies
Refrigerate immediately after mixing veggies and dressing.

How to Make New Year Rice


Ingredients for New Year Rice

Long grain rice – 2 cups
Mutton – 500 gms [cut into pieces]
Cinnamon –4
Cloves –5
Cardamom – 3
Ani seeds – ½ tsp
Ginger – 1 piece [chopped]
Onion paste – 1 tbsp
Onions – 2 [sliced]
Mint leaves a few
Garlic flakes – 10
Curd – ½ cup
Oil – ½ cup
Salt to taste
Ingredients for the Rice
Cashew nuts – 1 tbsp
Raisins – 10
Tomatoes – 2 [sliced]
Cloves – 8
Cardamom – 6
Cinnamon – 2
Coriander leaves – 1 tbsp [chopped]
Mint leaves – 1 tsp [chopped]
Ghee – 2 tsp
Milk – ¼ cup
Saffron dissolved in milk – a pinch

Method of Preparing New Year Rice

Powder the cloves, cinnamon and cardamom. Heat oil in a pan and fry the sliced onions and keep aside. In the same pan fry onion paste, chopped green chilies, chopped ginger and chopped garlic well.
Add the powdered ingredients to the mutton pieces and salt to taste.
Add boiling water and cook the meat. When the meat is half cooked add the curd and salt. Again cook the meat. When done strain one cup of gravy and keep aside.

Method of Preparing Rice

Boil water with cloves, cinnamon, cardamom and salt. Add washed and drained rice. Cover and cook the rice for 15—20 minutes.
 Fry the nuts in ghee. Heat oil in a pan and fry the sliced onions and remove. Add the sliced tomatoes and remove. Grease a thick bottomed pan spread half of the cooked rice. Then spread the mutton korma. Put another layer of rice.
Cover the rice with wet cloth, cover the pan and bake in oven and set in 350°F for 30n minutes.
Garnish with fried onions, raisins and cashew nuts.
Serve hot with salad.

Method of Preparing Pork Fry

 Cut the Pork into small pieces and mix with salt.
Add into a frying pan and keep stirring till the water from the pork dries up. Add oil. chopped green chillies, chopped onions, chopped tomatoes and fry on low flame until the pork is cooked.
Add vinegar and mix well and remove from the flame.
 Sprinkle salt and pepper. Garnish with chopped coriander leaves.
Pork fry is ready to serve.

How to Make Beef Fry


Ingredients for Beef Fry

Beef – ½ kg [cut into small pieces]
Fennel paste – 1 tsp
Ginger garlic paste – 1 tsp
Chili powder – 1 tsp
Pepper Powder – ½ tsp
Coriander powder – 2 tsp
Turmeric Powder – ½ tsp
Oil for frying
Garam masala – 1 tsp [cinnamon, Cardamom, Bay leaves, cloves and fennel]
 Salt to taste

Method of Preparing Beef Fry

Mix the beef with fennel paste, ginger garlic paste, chili powder, pepper powder, coriander powder, turmeric powder and salt. Cook the beef in a pressure cooker by adding enough water.
Heat oil in a pan and add the cooked beef and garam masala powder and fry till the beef become crisp and brown.
Serve hot with rice or chapatti

Beef Cutlet Recipe


Ingredients for beef cutlet

Beef – ½ kg [minced]
Potatoes – 2 [boiled and mashed]
Water – 4 cup
Pepper powder – ½ tsp
Chopped onion – 1 cup
Chopped ginger – 1 tsp
 Beaten egg – 1
Chopped coriander leaves – 1 tbsp
Bread crumbs – ½ cup
Juice of 1 lemon
Green chilies – 2 [chopped]
Salt to taste

Method of Preparing Beef Cutlet

Mix the beef with salt, chili powder and pepper powder and cook in a thick bottomed pan, till tender.
Remove from the heat and let it cool. Grind it dry in a mixer grinder.
 Add the mashed potatoes, chopped onions, chopped ginger, chopped ginger , chopped green chilies, lemon juice and chopped coriander leaves and mix well.
Make small balls and give the shape of cutlets. Dip in beaten egg and roll in bread crumbs and deep fry in hot oil, till it becomes golden brown.
Serve beef cutlet with tomato sauce.

Ingredients for Palappam

Rice – 3 cups
Cooked rice – ½  cup
Coconut milk – ½ cup
Sugar – 2 tbsp
Yeast – 1 tsp
Hot milk – ¼ cup

Method of Preparing Palappm

Soak the rice in water for 3 hours. Grind the rice in a mixer grinder by adding 2 cups of water.
Grind the cooked rice and add to the rice paste. Add sugar, salt and coconut milk and mix well.
Add yeast and hot milk in to the rice mixture and keep aside for 3 to 4 hours.
Make appams using a special utensil appachatti. Serve hot with chicken curry or potato stew.

Bread Slices – 6
Eggs – 2[boiled]
Butter – 25 gms
Pepper Powder – ¼ tsp
Tomatoes – 2 [sliced]
Fresh Coriander Leaves – 2 tbsp [chopped]
Salt to taste

Method of Preparing Quick Sandwich

Mash the boiled eggs and mix with butter, salt, chopped coriander leaves and pepper powder.  Butter the bread on one side and spread the egg mixture on it.  Top with the sliced tomato and cover a buttered slice of bread. Trim the crust and cut into triangle shape.
Repeat with the rest of bread slices. Serve with tomato sauce.

Kalakand Recipe


Ingredients for Kalakand

Sweetened Condensed Milk – 1 tin [400gms]
Milk Powder – 2 heaped tbsp
Saffron [Kesar] few strands
Cardamom Powder— ½ tsp
Cottage Cheese – 500gms
Pista slivers

Method of Preparing Kalakand

Mash the cottage cheese coarsely and mix with milk powder and condensed milk. Heat the mixture in thick bottom pan. Cook on medium heat with constant stirring till the mixture become thick and starts leaving the sides of the pan.
Remove from the flame and spread on to a greased plate. Sprinkle cardamom powder, sprinkle Saffron soaked in water and pista slivers.

How to Make Bread Fruit Thoren


Ingredients for Bread Fruit Thoren

Bread Fruit -- 2 cups [cut into small pieces and boiled]
Onion – 1 [sliced]
Green Chilies – 3 [chopped]
Coconut – ½ cup [grated]
Mustard – 1 tsp
Black Gram Dal – 1 tsp
Dry Red Chilies – 2[split into two pieces]
Rice – 1 tsp
Chili Powder – ½ tsp
Salt to Taste
Oil – 2 tbsp

Method of Preparing read Fruit Thoren

Heat oil in a pan and put mustard seeds, rice, dry chilies, black gram dal, curry leaves and fry for 5 minutes. Add onion and green chilies and fry, till it becomes light brown. Add the grated coconut and stir well.
Add the boiled bread fruit and mix carefully. Add the chili powder and salt. Cook, till the thoren becomes dry.

Rice Muruku Recipe


Ingredients for the Muruku 

 Raw [parmal] Rice – 4 cups
Urud dal [Bengal gram] – 1 cup [roasted and powdered]
Coconut Milk – ½ cup
Butter -- 100 gms
Cumin seeds – 2 tsp
Sesame seeds – 2 tsp
Salt to taste
Oil for deep frying

Method of Preparing Muruku

Soak the rice in water for 2 hours.  Drain and grind in mixer grinder by adding coconut milk and enough water to make a  paste.
Add the urad dal powder,  butter,cumin seeds, sesame seeds and salt into  the  rice paste and make a soft dough.   Fill in a muruku maker and put it into the hot oil and fry until it becomes golden brown.
You can keep it in an air tight container for 1 month.

Semolina [Rawa] Muruku


Ingredients for Semolina muruku

Semolina [Rawa] – 1 cup
Urad dal – ½ cup
Chili powder – ½ tsp
Asafoetida  ¼ tsp
Butter – 2 tbsp
Cumin seeds – 1 tsp
Salt to taste
Oil for deep frying

Method of the preparation of the muruku

Fry urad dal without oil, till it becomes light brown and soak in water for 2 hours. Grind the urad dal and make a smooth paste. Add semolina, chili powder, asafetida, butter, cumin seeds and salt to the dal paste and knead well.
Fill the mixture in the muruku mould and make muruku and deep fry till it becomes golden brown.

Karanji Recipe

Ingredients for Karanji

Dry coconut – 1 cup [grated]
Sugar – 1 cup [powdered]
Poppy seeds – 1 tsp
Dry fruits – 2 tsp [coarsely powdered]
Semolina – 2 tsp
Maida [plain flour] – 1 cup
Ghee – 1 tsp
Salt to taste
Warm milk to make dough
Oil for frying

Method of the preparation of karanji

Roast Poppy seeds, dry coconut, and semolina [rawa] and grind it in mixer grinder. Add sugar and mix well.
Add 1 tsp ghee and salt to maida and knead dough by adding milk.
 Make small ovel shaped pooris from the dough and fill the pooris with the prepared mixture and seal properly with little water and deep fry in hot oil till it becomes golden brown.
Keep in air tight container.

Ingredients for Jalebi

Plain flour [Maida] – 1 cup
Yogurt – 4 tbsp
Yeast—1 tsp
Water – 2 cups
Sugar – 1 cup
Saffron – a few strands
Oil for frying
Salt – 1 pinch

Method of Preparing Jellebi

Mix yeast, yogurt, saffron and little oil to maid and keep aside for 3—4 hours. Make sugar syrup by adding water and keep it warm on stove. Fill the batter in a cotton cloth and make holes in the bottom or [fill the batter into a squeeze bottle].
Squeeze rounded shapes into the hot oil and drain quickly. Dip into sugar syrup for 2 minutes and drain.
Serve hot
